Ghost peppers are for patient growers who enjoy a challenge. The seeds need steady warmth and can take up to a month to sprout, and the plants grow more slowly than cili padi.

  1. Soak seeds in warm water for a few hours, then sow 0.5 cm deep in a seedling tray kept warm and moist (not wet).
  2. Transplant into a large pot or polybag once seedlings have 4–6 true leaves.
  3. Space plants 50–60 cm apart and stake them as they get taller.
  4. Pick fruit when fully yellow.

Tip: heavy rain can make flowers drop — a simple rain shelter helps. These chillies are extremely hot: wear gloves when picking and cutting, and keep them away from children.
