Fennel suits home cooks who enjoy a mild aniseed flavour in fish, soups and salads. This is leaf fennel, grown for its feathery fronds and seeds rather than a swollen bulb. It is not hard to grow, but it sulks in strong afternoon sun.
- Soak the seeds in water for a few hours before sowing.
- Sow 0.5–1 cm deep straight into a deep pot (at least 25 cm) or bed, as seedlings dislike being moved.
- Thin to 10 cm, then to 20–30 cm as the plants grow.
- Snip the outer fronds once plants are about 25 cm tall.
Tip: in lowland heat, give afternoon shade, mulch and steady watering. Let a few plants flower if you want to collect seeds.
