Pak choy is a compact green that fits well on condo balconies and in hydroponic setups. Harvest it young for soups and salads, or let it grow into full heads for stir-fries.

  1. Start seeds in a tray or sow directly, about 0.5 cm deep.
  2. Move seedlings to their final spot at 3–4 true leaves, about 15–20 cm apart.
  3. Water regularly — letting the soil swing between bone-dry and soaked in hot weather can make plants bolt.
  4. Cut the whole plant at the base, or pick the outer leaves for a longer harvest.

Tip: in the hottest months, give plants afternoon shade. Pak choy stays sweeter and less bitter when it is not baking in the sun.
